A delicious dish made with red onion and garlic from our pals at JUX.
Ingredients
- 2 teaspoons JUX red onion
- 1 teaspoon JUX garlic
- 2 sausages
- Chilli flakes (to taste)
- A squeeze of Tomato paste (around 2 teaspoons)
- A drizzle cream (approx 50ml)
- 1 portion Radiatori pasta
- Parmesan to taste
- Optional: A handful of parsley to finish
Method
Deskin your sausages and whack into hot oil to fry in little chunks with salt and pepper
Use the back of a wooden spatula to press down and smash the sausages, then add a generous helping of chilli flakes and fry until the sausage is nearly cooked through
Move your sausage to the side and add more olive oil to the pan, followed by two teaspoons JUX red onion and one teaspoon of JUX garlic - which once fragrant you can stir into your sausage mix
Add tomato paste and cook out for a moment, followed by lots of pasta water and a big drizzle of cream to form a sauce
Add your cooked radiatori, some more pasta water and a sprinkle of Parmesan and toss until silky
Optional: Finish with parsley!
